Smoked Rainbow Trout

Some nice rainbow trout caught in a local lake...



Cleaned and gutted, ready for the brine




After brining for four hours and drying overnight, it's off to the Yoder at 225 degrees F.
with alder pellets in the hopper




One hour later, the fish is at 140 degrees F. and ready to come off the smoker



Off the smoker and stuffed with fresh dill...

I love trout - smoked or otherwise. Those look fantastic!
You can't catch a fish if you don't get a line wet...

I miss fishing!!  Love to catch a mess of trout like that, anytime.  I can almost taste the smoked trout in Tee's cream cheese dip.  Man that is good stuff!!

I'm not a fresh water fish guy but the bride loves it. (She doesn't like it smoked so I pan-fried two for her.)

And my neighbor always likes to have smoked fish so I do some for him also.

Looks Awesome, I grew up fishin trout on the Willamette river at the base of Mount Pisgah in Springfield Oregon. Nothing better than Rainbow trout.

Nice looking trout!!! When I was in Alaska there was nothing better than smoked trout or salmon and some good beer to wash it down! Don
