Reguest for Smoked Chicken
« Reply #-1 on: March 26, 2012, 03:19:49 PM »
My daughter and SIL came to visit and wanted some smoked chicken.  So bought two fresh Foster Farms chickens, home and into the brine for 24 hr.  A good rinse and dry, season and into the fridge for 24 hr, then into the Bradley for the first smoke/cook at 220* with Hickory.

After two hrs it was out of the Bradley ( IT @ breast was 141* ) and into the SRG.  about 45 min later the IT was 164* in the breast, so it was out and under foil for a little rest.

It was then time to plate up and eat.  Fresh green beans, garlic mashed potatoes, salad and a good glass of Merlot.
