Egg yolks run through a sieve... mayo, Dijon mustard, pepper and salt.

Crispy bacon on top garnished with sliced scallions and chives along with some smoked paprika

You are right! That is very simple and the little touch of bacon just kicks it up where the taste must be exquisite.

That is the same way we make ours but we don't add the bacon. Until now  ;)
