Potato Pancakes

This evening with our family dinner, my wife made her meatloaf and I made potato pancakes also know as potato latkes. Very simple recipe consisting of one potato for one onion. So if you want a batter of 6 potatoes use 6 onions of equal size. Use a food processor if you got one to shred the potatoes and onions. I don't have one so I grind them on one of those stand up things. Then add enough eggs, and enough flour and pepper to taste, maybe a little salt and mix this all together. Then fry them in vegetable oil that is about 1/2 inch to 3/4 of an inch deep. If the oil is at the right frying temperature, then the pancake after placed in the oil will float. Brown one side, flip and brown the other side. Place on a plate with paper towels to drain the oil. Serve plain with salt and pepper to taste; applesauce; sour cream; or ketchup.

Only make these about twice a year. They are good as a side dish with anything. We like to fry up some eggs over easy and have them with the potato pancakes.

Love potato latkes!!  We like to serve them with some smoked lox on top and sour cream on the side.  I usually try to make some around Christmas time.

Love latkes too! We had them often on Fridays during Lent as a kid. Put apple sauce on them then, as I got older sour cream was the topper. In Wisconsin at many places on Friday Night Fish Fry, potato pancakes are a popular side. Probably a Lent thing as well. Haven't had them for a while Ed, now you got me hungry for them. Thanks for sharing a nice memory!

We had potato pankcakes at the last gathering. I thought they were a lil too thick, the thinner ones were much better, but they were crispy and I like them that way. Good cook.  Pam  .☆´¯`•.¸¸. ི

I gained about five pounds just looking at 'em  :o

A great variation on this theme is to make polenta (corn meal mush essentially) with lots of good ol' chopped onions in it and fry that up to eat with just about anything, especially eggs. 

A friend gave me some home made jalapeno jelly that is great -- this gives me an idea . . .

 Latkes….soul food for some of us... ;)  I love them the way you made them Ed. But, some times I will grate potatoes, and  blot as much moisture out of them ( even leave them in the fridge overnight ) than press them out as thin as a I ca - and fry them until they are crispy….Then Sour cream, a bit of lemon juice whipped into it - and sprinkle some chives on it!

And - for dessert…more takes - with applesauce and a pinch of cinnamon ;) ;D
