Any horseradish recipes?

For Christmas I plan on making a standing rib roast. Anyone have a good horseradish/ horseradish sauce recipe?
Why couldn't Noah have swatted the 2 mosquitoes?.

Not really a horseradish "sauce" recipe, but another way to use horseradish with a standing rib roast.  I have done this about five times now and it is always a hit.  I take fresh horseradish root and coarse shred it in my food processor.  SEE NOTE BELOW!!  I rub a good Cajun-style mustard all over the roast.  This is the glue to hold the horseradish onto the meat.  If you use a charcoal cooker, you may need to tent the roast when the outside of the horseradish starts to get too dark.  I have been using my MAK to hot smoke/cook the roast.  I set the cooking temp to 200 and keep an eye on it with a probe temp.  When the meat is to you liking (I shoot for medium rare) you can remove the "crust" that forms just before carving.  That horseradish flavor is infused throughout the meat.  I highly recommend trying this.

CAUTION:  When you open the top of the food processor, the "fumes" will knock your socks off!!  Your head will be open for days to follow.  Your eyes will water, big time.

Gus..good choice on the roast..I grow my own horseradish and just grate it with a pinch of salt, and cover it with water. I like mine plain, not with mayo. I have never infused it like Art but that sounds fabulous. I make a big batch every year. An old, passed away friend taught me how to grow and make the horseradish. He even gave me the horseradish to grow. nice memories. You can only harvest in a month with an R in it like oysters. Pam  .☆´¯`•.¸¸. ི

Gus - I like to use the pure ground horseradish in the jar - and mix it with some au jus from the meat, then a little A-1….It makes a nice "dip" for the meat.

White BBQ Sauce

By

Ed

July 14, 2013

1.   (1) TSP onion powder
2.   (1) TSP garlic powder
3.   (1) TSP mustard powder
4.   (1) TBS Italian Seasoning
5.   (2) TBS ground black pepper
6.   (1) TSP Kosher Salt
7.   (2) cups Hellmans or name brand mayonnaise
8.   ½ cup of white wine vinegar
9.   2 TBS sugar or Splenda
10.    (2) TBS lemon juice or juice from one lemon
11.    Zest from one lemon
12.    (1) TSP Cayenne pepper
13.    2 TBS horse radish or lessen or increase to taste

Mix all of these ingredients together using a whisk.

Chill and serve.

This is good with the Rib Roast, chicken, or fish.

Make this a day a head of time, so the flavors have a chance to marry.

I small container of sour cream
1 tsp kosher or sea salt
1 tsp black pepper
1 tsp granulated garlic
1 T Worcestershire sauce
2 T fresh grated horseradish or bottled (may need to add more, depending on the strength)

Mix all ingredients together, place in a container and refrigerate over night. 
Will keep for a while, and is great on roast beef sandwiches.

I still have nightmares from when we were kids and my dad did his first freshly ground horseradish in the Cuisinart. "Come take a whiff of this, kids!"  So of course I stuck my ENTIRE face into the bowl before inhaling.  I think I might have been better off with a direct shot of mustard gas!

I don't have a recipe but I do have a story.

Many years ago I worked with a fellow who liked the heat. Hot peppers, horse radish, etc. Anyway this older Ukrainian gentlemen asked him it he wanted to try some home made horseradish, buddy said sure eat that stuff tablespoon at a time.

A week or so later we were back on the day shift and this fellow brings it by, buddy grabs a spoon and digs in. The expression and noise that followed was priceless, I laughed for days.
