Tex-Mex Chili Jack Bake

Smokentime’s wife Toni shared this recipe that she found here on Facebook.  I thought it
looked very interesting and decided to give it a shot.  Here are the ingredients for tonight’s
cook. I followed the recipe pretty much except I substituted the kidney beans for pinto beans
and used Colby jack and some of my recently Apple smoked Monterrey Jack cheeses.  The other
thing I did different was after all the preparations were completed I cooked it on my Grid Iron
nstead of using the oven.  I wanted to add just a bit of smoke to the mixture.

Silent movie for now.







Into the Grid Iron using apple pellets and started it at 250.

Half an hour later I bumped the temperature to 325 and finished it in about 20 minutes.


Plated with some corn and ciabatta bread.

Very delicious casserole.  The flavors worked well together.  When I make this again I am going to add
some more heat to it with some extra ancho chili powder and some diced jalapenos.  My wife likes it the
way it is so I will either have to sneak the extra ingredients in or just use some Sriracha sauce on my portion.  8)
If you like casseroles then I really recommend that you give this one a try.

That does look good - sort of a south-of-the-border lasagne.  It would probably also taste good substituting tortilla chips for the pasta
