That looks fantastic!!  I love Brie.  When we have it around our house it usually doesn't last too long.  Your version looks like it just made my 2014 To-Do List.

Cliff, you can do either way, whichever to your taste, we like the extra flavor of the rind so on this one we left the rind.

Looks like a great way to do brie, hikerman.  I do something similar, but use filo sheets, sauteed mushrooms, garlic, and a thick layer of cream cheese painted on both sides of the brie
