... on an immersion circulator for sous vide: Anovo, the company that manufactures industrial grade circulators.  One of the design engineers is quoted as saying that he tool the laboratory grade temperature circulators and reducing it into the physical form of this unit.  This unit reportedly compares to the Polyscience units that are the standard for professional cooking.  Amazon currently sells the unit for $450, but I purchased it from the company for $199.  There is rumor that Anova reduced the price to compete with Sansaire

Specifications (I can hardly believe the temperature stability, but reviews confirm it)

  • Pump Speed: 12L/min Directional
  • Tank capacity: up to 22 liters (5-6 gallons)

Wow Anova really dropped the price! Great score PZ!

One reason that I bought the Dorkfood DSV was because I would not be limited to just one cooking vessel. And of course the price was right.

Had the price been that low then I might have bought the Anova.

I think Anova is losing money on that unit now at that price! :-[

Indeed - from $450 to $199 is quite the price drop - the rumor is that they felt they had to drop the price to compete with the Sansaire

I honestly don't know - the pictures I've seen are using a simple metal pot, but something insulated makes sense simply from an energy consumption stand point.  1000 watts is quite a bit of energy, but why wast it if you don't need to.  The other issue is water evaporation for the longer cooks - some people put cling wrap atop the pot.

I guess I'll find out when I try it
