Since I was visited by fishingbouchman last year, I have to try quite a lot of new rubs. Today I gave the Simply Marvelous Spicy Apple Rub a shot on a pork loin, that was first injected with a mixture of apple juice, a bit apple cider vinegar, soy sauce, mustard and canola oil. It was smoked at 230°F with apple wood in my big ceramic grill until a IT of 122 °F was reached. Then the pork loin was glazed with a mix of apple jelly, apple juice, worcestershire sauce and some of the rub. After a second glaze at an IT of 131°F, I tossed it at my mini ceramic grill that had a temperature of 315°F and cooked it to a final IT of 138°F. It was plated up with a apple-mushroom-risotto and Romanesco broccoli.
That was the best pork loin I've ever made - despite of the sprinkles in the meat, that were caused by the injected marinade. The pork loin was tender like butter and very moist. The taste of the rub was a perfect match to the meat and harmonized great with the risotto.
