I recently made corned beef and had some in the freezer... Time to make corned beef hash eggs benedict...



Hash (corned beef, onion and potatoes) browning in a cast iron skillet




Two jumbo eggs poaching for three minutes




Layered the hash on a plate, topped with the eggs and hollandaise

Hollandaise can be kind of tricky if you make it from scratch.

At home I use a packaged mix so all you have to do is add water (or milk depending on the brand). It's not as good as scratch Hollandaise but it works.

With the packaged mix I usually add a spritz of lemon juice to brighten the flavor.

And you can always turn Hollandaise into Béarnaise (for meat) by adding tarragon.
