Had some time to cook today.. Let's do this. Started with a sirloin roast rubbed with fine swine and bovine.

Started on smoke for 40 mins and bumped to 325 to an internal of 135.
Let make the au juis ..

Sear the oxtail..

Add the carrots, celery and onion

Add a little soul man to deglaze the pan

Add beef stock an simmer

Now let's make the Yorkshire pudding.. 3 eggs , 1 cup of flour , and 1 cup of milk.




Strain off the au jus and put in sauce pot to reduce






Yorkshire done... Nice pop!
