I love bread & butter pickles and the ones you get in the store just aren't like grandma used to make. After searching around I found Alton Brown's recipe for some quick Bread & Butter Pickles. I thought it could use a bit of tweaking, so after a bit of trial here's what I've come up with. These are tender, yet crisp & crunchy. I can't believe how good these are and simple to make!
Quick & Easy Bread & Butter PicklesIngredients1 large salad cucumber, sliced.
Discard the end cuts!1 medium onion, cut in half and thinly sliced
1 cup sugar
1/2 cup apple cider vinegar
1 teaspoon pickling salt
1 teaspoon mustard seeds
1/4 teaspoon celery seed
1/4 - 1/2 teaspoon curry powder
(includes turmeric as a main ingredient for color and many of the same spices as pickling spice).
1/4 teaspoon red pepper flakes
Directions:1) In a lidded microwave safe casserole dish: Layer the cucumbers & onions. Mix everything else together and pour over the cucumbers & onions.
2) Place the lid on the container, Microwave on high for 3 minutes & stir. Repeat twice for a total of 8 - 9 minutes until cucumbers are tender and onion is translucent.
3) Chill before serving & store in the refrigerator.
Tip: ALWAYS discard the end cuts of cucumbers when making pickles, especially the blossom end. The ends collect an enzyme which can keep your pickles from staying crisp.
