Greek Pasta Salad
« Reply #-1 on: January 30, 2014, 11:50:41 AM »
I was at Meijer's the other day and they had Greek pasta salad on sale for $4.99 a lb.  Well..I make this every year at the campground..so I made a bunch for less than the price of a lb. at the store. Very easy to make too.  Pam    .☆´¯`•.¸¸. ི♥ྀ.

A recipe?  OMG..I will try.
cook some pasta, any kind, you decide how much you wanna make. I like the mini penne but use what I have.
add some chopped Kalamata olives sliced, green olives sliced, pepperoncini peppers chopped to taste. I also add some of the juice from each of them.
red onions chopped
cucumbers chopped & deseeded
Greek dressing - Kraft
Greek seasoning to taste
at least 8 oz. Feta Cheese
juice of a lemon or lime
S & fresh cracked Pepper
gahhlick, a couple of cloves
pinch of sugar
lil tomatoes if you like them
a lil light olive oil, I don't like the evoo
I boil pasta while cutting up everything. Rinse pasta so it gets cold faster. I don't have amounts because I fake it every time. This is how I cook so just go for it till it tastes good. Can be halved or doubled.

Sounds a lot like the one at our friends greek restaurant in Dallas. I smoked some Feta and I'm waiting for it to finish it's resting period before I try it and see if it's any good.

I ate some right away but it gets better as it sits..have had it sit for a few days..hubby doesn't like it so I make smaller batches for me. I have added artichokes that I get from Sam's club, big jars and I quarter them, roasting them first really kicks it up some. You can add anything to them, I just cook that way, only use recipes for baking. Making ahead is just fine. I make lots of pasta salads, specially in the summer, like soups in the winter.  Pam    .☆´¯`•.¸¸. ི♥ྀ.
