Smoked Pickle Eggs
« Reply #-1 on: February 09, 2014, 03:56:20 PM »
Going to put this here, I like a pickled egg or two with a beer or 24  ;D ;D

Just 12 eggs

Into the smoker. Was going to cold smoke but they where not taking on any color so I put the heat up to 85F.

Got a little brown

Back in the jar and a rest in the fridge

Never made these before, seen lots of posts here and on another forum I used to belong to but really don't know if you have to give them time before eating like the smoked cheese? Don't like the ash tray affect in my mouth so I'm asking how long before eating?

Yeah if the temp is really cold, and the air very dry I bet it would be tough getting any color to them. 85° is still considered a cold smoke, but I bet it helped having a little warmth.

Question: Are these a spicy hot-pepper pickled egg? It looks like you have some hot peppers in there, but it's hard to tell through the brine.

I made some smoked pickled mustard eggs last year, but they were OK at best. I think the smoke flavor would've paired much better with a hot & spicy flavor.  Thoughts?

These where store bought on a whim, I thought I would add a few peppers from a jar of hot peppers. I have made my own in the past but never smoked them. I just don't want to be over powered from the smoke. Went with a 2 hour smoke, maybe a tad more.

Oh, they were already pickled before smoking?  Hmmm... actually that gives me an idea... Thanks Devo!

I smoked some regular eggs before and they were ok, but never have tried the pickled ones. Will have to look into this.

We know first hand how true that is.  My BIL and I take a bunch of pickled eggs that I make to the NASCAR race every year and the same group that sits behind us has to deal with the aroma.  One year one of the guys in that group took us up on an offer of my infamous pickled eggs and the results must have been deadly.  The next day at the races the rest of his group begged us not to give him anymore pickled eggs.  I gues the ride in the car back to their hotel wasn't very pleasant.  LOL!!!

A couple of years ago I smoked some eggs, gahhlick and jalapenons, bologna and onions..used a basic brine and let them sit for about a month..can't remember whose recipe it was, maybe Savannah smokers, but they have to sit..I did a 2 hour smoke of fruit wood, pear and with smoked cheese on the side..the guys killed them in 1 eating.  Pam   .☆´¯`•.¸¸. ི♥ྀ.
