@Pam--grill them guys!   I just melt some butter, chop some fresh dill weed, add lemon juice to the butter and dill, baste inside, put on grill, baste outside, then eat!   Just be careful you don't overcook them.   Easy to do cause most of our fresh caught trout are 10-12 inches, max.   Some larger, but not too many--those are in catch and release streams around here.
