I'm back in good graces, lobster !

Lobster tails from Sam's .



Removed from shell, a wee bit of surgery .



Packaged with butter , salt, pepper, & lemon.



Into the bath @ 142F for 30 min. ( actually about 45 min. Waited on the end of the Duke BB game)

Served with spaghetti squash, steamed asparagus , & a butter , garlic, lemon & white wine dipping sauce.

Well, it looks good but I for one could use some words telling us how well (or not so well) sous vide works with lobster tails.

Well, it looks good but I for one could use some words telling us how well (or not so well) sous vide works with lobster tails.
The 3 seafood cooks have been very good, cod & lobster , also scallops which I seared before serving.
Texture & mouth feel perfect. The flavor is exactly like poaching or steaming, the seasonings or dip adds the flavor.
Getting my time of prep down, think I can get the total cooking time close to grilling or steaming.
Only other cook was eggs cooked poached eggs almost perfect .
I'll try salmon & a steak next week.
