Chicory and twice baked taters

For a contest in my German home forum with the theme "vegetarian" I cooked chicory and twice baked taters.

The taters were palced for 2 hours on the ceramic cooker over low indirect heat with some applewood smoke. Then they were scooped out and mashed.



Meanwhile I roasted some scallions until the skin was charred.





The charred skin was removed, then the scallions were chopped and blended together with salt and pepper, sour cream and grated cheese with the mashed potatoes. That was filled in the potatoe skins and topped with some grated cheese.

The chicory was halved, salted and topped with some slices of blue cheese. Then these chicory halves were placed on a water soaked plank over direct heat in the grill. The taters were placed over indirect heat. That all was cooked for half an hour, then plated up with some lingonberries.

Interesting take on veggies.  I like it a lot.  I like everything you did.  The chicory and blue cheese intrigue me.  Must do that one.
