The other day I posted what I do for Pico_De_Gallo and today I decided to show my Guacamole. I will do it a little different from time to time.

What you will need.

•   2 ripe avocados
•   Kosher/Sea salt
•   lemon juice   
•   cilantro
•   black pepper

What to do with it.

•   Cut the avocados in half. Remove seed. Scoop out avocado into a mixing bowl.
•   Use a fork, roughly mash the avocado. Sprinkle with salt, pepper, lime juice and the chopped cilantro.
•   Cover with plastic wrap directly on the surface of the guacamole. Refrigerate until ready.

Note: you can add the ingredients to your taste and also add minced red onion and some heat if you wish.

Sounds great right now.  I had come killer guacamole at a Tex-Mex joint last week at lunch with some of my Yelp friends.  I don't eat it that often, but I do like it when I get the chance.

Guacamole looks good RAD!

I have heard that if you leave the pit in the bowl when storing guacamole in the refrigerator it will help prevent it from browning in color. I don't know if this really works or not but it seems to help when I do it.

That is one of my favourite spread .
i add a grated hard boiled egg to the mix and you get a great spread .

Looks great.

I've been known to add the yolks of hard boiled eggs to guacamole and stuff the mixture back into the sliced egg whites creating guacamole deviled eggs, with little added heat.

That is true.  Back in my fry-cook days, if we made a bunch of guac the night before, we would scoop on a top layer of mayo to completely cover the gauc. Just spoon off the top layer the next day and grab a big bag of corn chips  :P :P

Your guac looks real sabroso Rad  :P :P

Someone recently told me that if you cover the guacamole with a layer of water it will prevent it from turning brown.  When ready to serve again just pour the water off, I'll have to try that method and see how it works.

Little hole in the wall place ( you know what I'm talking about--no more than two chairs match, NONE of the tables) in Las Vegas, NEW Mexico, has the best quacamole EVER!   They use ONLY mashed avocado, minced garlic or garlic powder and LIME juice.    Es perfecto!  Only way we make it these days--forget all that other stuff--that just makes it gringo food!
