Huevos rancheros a staple here. I normally use leftover refried beans (none available, then canned refritos--not as good, and much heavier in fat), corn tortillas, just warmed, fry the egg(s), flip onto tortilla with refritos around the edge to hold the egg in place, top with grated cheddar cheese and salsa (or just chopped fresh roasted green chile) and have at it. Love em. Kids and grandkids ask for them all the time.
