Smoked Candy Almonds (test batch in the dehydrator)
« Reply #-1 on: March 13, 2014, 04:39:17 PM »
Yesterday was jerky and today is going to be candy almonds.

Recipe here

✓ 2 Tbsp vegetable oil (I used extra light olive oil)

✓ 1 tsp of liquid smoke (optional)

✓ 1 Tbsp finely ground kosher or sea salt (I used my Sriracha Sauce Smoked Salt)

✓ 2 tsp chile powder

✓ 1 tsp ground black pepper (I used the cracked pepper & garlic from my sausage mix)

✓ 1/4 tsp cayenne pepper (more if you like hotter)

✓ 1/2 tsp garlic powder

✓ 1 Tbsp of Tatonka Dust

✓ 12 oz. bag of fresh almonds

✓ Pour ground spices into a large bowl, and combine with oil. Mix well. Add almonds and use a rubber spatulas and mix well again so the almonds are well coated.

✓ Place on dehydrator sheet and put dehydrator on the highest setting. Mine only goes to 155 so I set the time for 3 hours.

✓ After 3 hours of drying I coated them with some garlic honey and back into the dehydrator till dry to the touch.

The garlic honey was made back in January when I thought I was coming down with a bad winter cold. A tablespoon of this stuff in a cup of tea with rum in it will fix ya up soon  ;D ;D ;D

Never did get sick to the point I needed it so I am using it here

Those look great!!! I love almonds and did some I actually smoked on my Traeger, it is hard to get any flavors into the almonds since they are dense so your method may be better. Don
