Spuds Smoked Beet Pickled Eggs

Eggs boiled,peeled and on grill with apple smoke from amazen smoker.Ambient temp 56F degrees to 64F.Cold smoked.




2.5 hours later,light brown,hard to see....



In jar...



Sliced one yellow onion,add pickled beets



Looking good,into refer for a few days at least...



Will update when ready to eat

Thanks for posting!   My spicy-smoke-pickled-mustard eggs were kind of a flop, so I'll be watching to see how you think these taste.

Got pictures fixed,photobucket doesnt like me today....

Ive made beet pickled eggs before,they were very good if you like beets.These are pickled beet eggs I made before after 3 week soak

Every year near the end of Feb I make up a batch of five dozen pickled eggs. Reason being is that my BIL loves them and he comes to town for NASCAR every year which is the first weekend in March.

We take a dozen with us each of the three days at the races to snack on and he takes two dozen back home with him, boy does that make my sister PO'ed.

When he goes back to work, he is an auto mechanic, his co-workers put him outside to work, they won't let him in the garage for a week after he gets back.

A couple of years ago one member of the group that always sits behind us at NASCAR took us up on an offer to have a pickled egg, this was on Saturday.  Sunday when they came back for the Sprint Cup race they asked us if we had anymore of them pickled eggs, we said sure here.  The rest of the group said NOOOOOO....and don't you dare give him another one.

I guess either the car ride back to their hotel, or in their hotel room was very aromatic Saturday evening.  ;D

Ok,smoke taste takes a minute to get there,not a bad thing,aftertaste for sure taste smoke.Wife says crisp,great color,and would be very good on a salad.She gave it 8.5 out of ten,I concur.They are certainly edible,and to follow egg half with some beet and onion,good combo.

Color and bad lighting gave camera fits,its a really good looking jar

Those look tasty, wonder if you pickled them and then smoked them if the smoke flavor would be stronger.

I think I might make smoke slightly less.1 egg and some beets was a nice snack.And the beets did get a little smokey flavor too.Im happy with the result,werent horrible like some others experience,beets I like on occasion.

Sure made a pretty egg wife says.
