The last of freshly harvested oysters until next November... Have to get them from the fish monger until then.

Those look good, I love raw oysters. I am going to FL in May, I hope the Apalachicola Bay is open for oysters. They are my favorite.

Fresh oysters are great.  I used to stop on the Eastern Shore of Maryland and buy a gallon of fresh shucked oysters on my return trip from hunting geese.  Even if we didn't score on geese, we always scored on oysters.  When you buy them in quantity you can try a lot of different recipes.  Good eats!!

I chew, but if you have one on a cracker, don't take a bite and look at what is left. Put the whole thing in your mouth then chew.

Local fish mongers charge $1.50 per oyster (unshucked)... and you don't know how fresh they are.

A recreational shellfish permit is $30 for the season and you can get a half peck of oysters a week (February to April) and a bushel of scallops. Unfortunately, scallop and oyster season are now closed.

Nothing like oysters harvested in the morning and served that night! (I agree, it's a acquired taste <lol>.) Or at least dealing with the way they look.

Those look great.  The last good oysters I had were in Mobile Ala. and that was too long ago.

We like staying in the Apalachicola, Port St Joe, Carrabelle area in Florida. You can go down in the early afternoon and get the oysters while they are unloading them off the boats. You tell them how pounds you want and they shovel them out and wash them and put them in a bag. In my  opinion Apalach oysters are the best.
