Tri Tip

Inspired by Hikerman and HighOnSmoke I seasoned a tri tip with M3 and WOW. I smoked it today with some applewood smoke at 250° F until an IT of 115° F was reached. Then I gave it a sear from all sides over high direct heat. Meanwhile I cooked some scallops in some ramp oil on a saltblock as a starter.

Great cook, as usual, WC.  The tri-tip looks delicious.  The scallops on the salt block are on my list to try.  I bought a salt block a while back and haven't used it, yet.  Was you ramp oil homemade?  I don't recall seeing it anywhere.  Although, I will start looking specifically for some.

Beautiful! Those scallops belong on The Food Network, almost too pretty to eat. I can't believe you can find tri tip over in Germany and I can hardly find it here.
