Ok now my disclaimer is out of the way your all fair game. A friend of mine seen this somewhere and challenged me to try and make it. I'm always up for a challenge. It goes like this...
Take this stuff
Slice the onions into 1/2 inch slices and keep 2 rings together
Add some Siracha sauce
Wrap with thin sliced bacon and secure with toothpicks
Repeat and top with your favourite rub.. I used Super Pig..
On the Mak at 275 for 90 mins and plated with some Chipotle mayo to dip
