One of my personal favorite ways is to get sashimi grade (when it is available) and then either eat it raw as it is intended, but sometimes will use the infrared unit in the grill to quick-sear the fish but leave the inside still cold. A nice soy, rice vinegar, wasabi dipping sauce and I'm in food heaven
