Pan seared Salmon and Ahi

Wife wanted Ahi and I wanted Salmon. They were seasoned with Big Poppa's Desert Gold and light spray with canola oil.

First the Ahi...



I ended up overcooking it a tad. I did not pull it early enough. Wife said it was still good...

Still looks good! 

One of my personal favorite ways is to get sashimi grade (when it is available) and then either eat it raw as it is intended, but sometimes will use the infrared unit in the grill to quick-sear the fish but leave the inside still cold.  A nice soy, rice vinegar, wasabi dipping sauce and I'm in food heaven  ;D

fish looks great to me partner.  the first thing i thought was when i seen the fish was that you used your uni pellet pizza cooker to cook the fish.

We did some swordfish steaks (note the similarity between swordfish and unicorns) last week using the sous vide circulator and then quick searing on the stove top. That may be my new favorite way to cook fish and is keeping the sous vide machine off the auction block.
