With the harvest of squash rolling in I need to find creative ways to incorporate the Zucchini and Yellow Squash. So I threw together one of my "concoctions"
Concoctions are easy ... you just use what you want and or what you have!
Cooked, drained, and set aside 1 lb of hamburger. In EVOO - cooked celery, onion, red pepper, mushrooms, zucchini and yellow squash till al dente. Add can of stewed tomatoes and tomato sauce. Season to taste with garlic, salt, pepper and Italian seasoning. Simmer to incorporate all the flavors.
Meanwhile -> bake a spaghetti squash. Serve the concoction over some spaghetti squash ...
