The key here is to use lard that is the leftover fat from Chicharones, it looks almost like caramel in color. Do not even try this with "manteca" lard the white stuff. You'll need to make friends with a local Mexican market to find it.
Vacuum seal large pieces of pork but with the "lard" and sous vide at ~ 159f for ~ 48 hours.
Remove, chill completely at least overnight, then remove, cut up and fry at high temps not to overcook all the time you put in sous viding it.

I guarantee you will not be disappointed.
