Sous Vide Alaskan Salmon & Yellow Fin Tuna

Staring from frozen. Two of each...



Started out with cold water. Dorkfood DSV set to 109F. They only take about 30 minutes to finish when thawed. So I will give them 30 minutes cook time once the water reaches set temp...



When done they will go into a ice bath and fridge. Then when it comes time for dinner I will de-bag them, season, and quick sear on the skillet or use my torch ;)

Easy dinner plans. See you this afternoon!

And just so you guys know this fish is Sushi Grade so that is why I am going 109F otherwise I would go 116F

So after about 60 minutes the water bath reached 109F so I gave them 15 minutes more after that...



Then immediately into a ice bath...



I am wondering if the extra 15 minutes is needed. Now that I think about it as soon as the water reaches set temp then the fish will also be at that temp since they came up in temperature with the water. Oh well we shall see how they turn out later for dinner ;)

Great idea, muebe - I usually eat my sushi grade as sashimi, but this method sounds perfect for other fish we purchase at Costco!

I use my sous vide for seafood most of the time.
Med-Rare salmon is wonderful!
I no longer overcook scallops ::)

They were seasoned with Desert Gold and given a 45 second sear per side...











Both types of fish came out phenomenal. The Salmon could have been removed a little but earlier. It was not as thick as the tuna but still outstanding. So moist and juicy. Wow!!!!
