I want to say that my crust ends up much more done than his pizzas in the video. When cutting with the pizza cutter mine are crisp.

My pizzas are not as thick as the ones he makes in the video however.

An important point... while the oven can contribute to the crispy crust - the baker needs to understand what type of crust he is making. The ideal is to know your oven and the type of crust you like and make the crust your oven can bake the way you like...
