Title: Papoutsakia stuffed eggplant

Came across this while looking for something new to try

Started with the main ingredients

Cut and scooped out most of the eggplant

Quick fry in some evoo

Transfer to paper towels

Diced up some onion and minced garlic into a pan to soften

Add ground beef and brown

Add red wine, crushed tomato and spices

While that is simmering and reducing for an hour I made a bechamel sauce.

And some garlic flat bread

Took the eggplant shells, light layer of Parmesan cheese, then the meat mixture and topped with the bechamel sauce.

Into the oven at 350 for 25 mins or so.. It's too cold to use the Mak

Very interesting flavours.. Kids didn't like it but I thought it was ok.

Looks good--bookmarking it IF I can ever get my wife (and hopefully kids and/or guests) to eat eggplant.   I love it, especially grilled after salting and let it sit, brush with EVOO, and then grill til it shows brown--not TOO much!

I've never tried eggplant but just may have to now after seeing this. That looks real tasty Scally!

And here I clicked on the thread expecting to see a stuffed chicken......( chicken = egg plant.... ) :D :D :D

Looks and sounds great, thanks for posting it.  I never liked eggplant until a trip to Italy years ago where I had lasagna made with thin sliced of grilled eggplant used in place of pasta.  It was very good.

Popsicle Toes is great. He did a bunch of clever light jazz...
