Barbacoa
« Reply #-1 on: January 31, 2021, 10:31:48 PM »
Made barbacoa in the Instant Pot and it was really good, but was missing the smoke flavor.  Has anybody made barbacoa in pellet grill. Care to share general technique?

I would use half a teaspoon unless you like a lot of smoke..this stuff is very strong. You can add more to the cooking liquid after but use sparingly. I like the hickory the best, it's up to you..use mesquite on red meats, beef, venison, etc. it's really strong.

I would use a few drops, then sniff, and taste. It is POWERFUL...highly concentrated and if over-done...tastes and smells like you are chewing on a creosote  fence post..... ;D
