Title: Jerk Wings and Caribbean rice and beans

Inspired by 1Bigg_er, I decided my second PBC Got some McCormick Jerk seasoning for lack of one better (It gets decent reviews on Amazon but I found it in the store - will make my own next time), separated wings, seasoned both sides. As I went to put bowl in fridge I saw a small Florida sour orange on the counter I picked from a tree outside and squeezed it on and tossed. Put in fridge at 9:30 AM.

Started the PCB with some Cowboy lump ( I only had a little) and Kingsford. Tossed 30 Kingsford in chimney and started it, Tossed them on 15 mins later, left cover off and 20 mins later put on wings. Fire very uniformly lit and hot. Left 1 rebar out. Put probe in other rebar hole. Temps only came up to 290 so I cracked the lid. Peeked in after 20 mins and notices the tip of probe was sitting on top of a wing - flipped a wing and had a nice crisp on it so flipped all. Seems the wings in the "northwest" half of the PBC were nicely crisp and "southeast half not so crisp. No wind to speak of.. Stuck lid back on with probe properly placed an temp went to 350 with lid shut and 1 rebar out. Held right there very nicely. This thing DOES hold temps once it settled down from lid removal. 15 mins later peeked again and wings were nicely crisp although some were a bit less crisp. I had a large stainless bowl with orange Juice, molasses, and brown sugar in it so I took the nicely done wings out and put in the bowl, left the others for 5 more mins. Pulled them out, tossed all with OJ mixture, placed back on grill cover off for 5 mins.

Made some Caribbean rice - Made rice with come coconut milk in the water. IN fry pan, sauteed red pepper, onion, garlic, added Allspice, cinnamon, clove, nutmeg, thyme, red pepper flakes. Mixed that up and tossed in rice. Added some salt and Worcestershire sauce. Threw in a bit of chicken stock as it was a bit dryer than I wanted. Made some steamed broccoli as a concession to health food. Plated photo a bit blurry but I was more in a hurry to taste them.

Wife remarked on crispness which made me happy. I found most were quite crispy, some could have used a bit more. But overall, the flavor was there and the moistness was there. Very pleased with the cook overall. If I had it to do over, I think I would have put some oil in with the initial spice and put orange juice in an hour before cook.

Wings look great
