Round 3 on my new PBC, this time pork butt about 5.5lb. I did this one on the 21st and just had some time to post it now. Kind of a full circle post from my first Thanksgiving turkey disaster. Temps were pretty much on point and I am much closer to a better charcoal light, than I was even on my 2nd cook.
- Filled basket a little above the rim.
- Put 35 charcoal in chimney
- Put a newspaper in between the coals in the chimney
- 20 minutes to light
- Put the coals in the basket with 3 chunks of applewood
- Let sit with the lid open and rebar in for 20 more minutes.
- Put the butt in with both rebar.
- PBC temp was 400+ (temp gauge read HHH) when I closed the lid.
- 15 minutes in temp was PBC 364
- 28 minutes PBC 335
- 1hr 30min - PBC 284
- 1hr 50min - internal temp 139 PBC temp 228
- 1hr 50min - removed rebar settled at pbc temp 279
- 3hr 40min PBC temp 286 pork internal temp 168
- Wrapped with beef broth and leinenkugel cranberry ginger shandy
- Remove from PBC at 5 hours internal temp 200
- Let rest for an hour.

what was the outside temp and elevation, if I may ask?

Just saw this as I don't get notified for some reason of new posts. We were all warm this December but where I am in The southeastern most point of SC we were probably around 65-70 this day. Elevation close to sea level. Don't call my area The Low Country for nothing. Lol
