Had friends coming over and Kerry wanted salmon, I went to Fresh Seafood because they have it flown in fresh on Thursdays for local resturants. The Guy said they sold out! Oh no, What to do. I remembered WalMart had IQF salmon last week so I headed down there. It claimed to be premium so I took a chance.
I made a thin marinade with bourbon and maple syrup. Coated the fish with it first. It soaked it right up. I added a dry creole seasonig as well. I applied the marinade during cooking several times. I set up the kettle with the baskets off to each side. This cooked slower than expected but that's OK. When Kerry started asking I moved the basket to the center and speeded things up. I was a little afraid do drying out the salmon but it turned out great.
Two of the grand kids were over for the night as well so I quick brined some chicken legs for them. I cooked them on the gas for rooms sake.
I made stuffed mushrooms with garlic/herb soft cheese adding my own fresh basil and thyme with a slice of tomato,avocado and a little shaved Parmesan.
Everything came out well. One of my guest wanted to try a chicken leg and ened up eating two. This made Gabe(grandson) none to happy because it held up dessert! Fresh strawberries and chocolate ice cream.
