I picked up two five 5lb boneless hams from Costco and cooked them for Christmas Eve this year. I pulled them out of the fridge about 1 hour before putting in my Bradley and applied a glaze of brown sugar and honey. I did them in the Bradley at 230 and applied maple smoke for 2 hours then cook at 230 until they reach an IT of 140, they ended up taking about 30 minutes per lb or 5 hours. Then I applied the glaze again and put them in a 450 degree oven for about ten minutes, after that I let them rest for 30 minutes and then carved them. They turned out really moist and had great flavor, I would definitely cook them again for an easy holiday meal.
