Teriyaki Jerky
« Reply #-1 on: April 19, 2018, 03:58:26 PM »
One of the many recipes out there.
No idea what I mixed into it last night but I know it has
Garlic
ginger
Veri Veri Teriyaki® Marinade & Sauce
worcestershire sauce
smoked salt
pepper
Cure #1
 ;D
Its dam good anyways

Small 3 pound batch from eye of round that was on sale.

Hanging from the rack in my bradley smoker. Used toothpicks to hang them. This is my preferred method. Takes longer to hang them but everything gets done at the same time.

Going in for 1 hour at 150F to dry them out some.

After 1 hour they got 4-5 hours of smoke.

Not much there but what is there are darn good.

That looks really good, I think I need to try that.  If you don't mind posting the recipe that would be great.

I looks really good, Agustine.  This is one treat I used to make (years ago), and loved it!  Sadly I can't have soy products any longer.  :(   So how about eating a piece or two for me!  ;)

I've made jerky before but don't have a good way of slicing the meat into even thickness pieces so have trouble with motivation to do more. Am I correct in thinking you may have a meat / cheese slicer? If so what is it?

Well yes I do have a Hobart meat slicer that I have used. The trick is to let the meat sit in the freezer for a hour or two before slicing.
Thing is for small batches like this one I hate having to clean my slicer for just 5 pounds of meat so I bought a very large cheap slicing knife with a serrated edge. If you take your time it does a pretty good job. I sliced the lot into approximately 1/8-1/4" wide strips—depending on how distracted I was during the slicing.
