Since no one posted anything for Labor Day I thought I would Did 2 racks of spares and cut into St Louis and rib ends. I really enjoy the rib ends as they are very tasty. Picked up some chicken quarters and a Picanah (cousin to Tri-tip). The Picanah was on sale for $4.99 a lb. It was a bit tough and I think it was not choice grade. Didn't taste bad the next day so go figure. We were in Sam's Club the other day and noticed Tri-tip. This is packaged by a company with some kind of marinade so it is not in the fresh meat case. I am not a fan of marinaded beef but wonder if any of you have tried this

Looks great! I haven't tried pre-marinated tri-tip, generally just stay away from the pre-seasoned meat. Let us know how it turns out if you try it!

I bought a marinated skirt steak at Costco. Had a really weird mouth feel. Your meat looks great

Picanah is one of my favorite cuts and have had outstanding results. Did you cut off the fat cap? I've done both ways and prefer to remove it. Food looks good!

Yes I removed the fat cap. I have bought this before from Western Beef at a higher cost so I think at that time the grade was "choice". Maybe this time it was actually "select"> They do not show meat grades on the packaging. I did not follow my own rules which is not to buy meat that is not graded. Then again all protein are not created equal.
