Today was a good day for cooking. Stephanie wanted to try something new on the KBQ so I cut her up some wood and let her have it!
She bought a Duroc pork belly the other day and she let me have some of it for making bacon (begrudgingly) and the rest went to making pork belly burnt ends and she wanted to do a "Texas" style smoked pork belly with just Kosher Salt and Coarse Pepper. To round out the pork feast, I prepped up a rack of Baby Backs and made a tray of ABTs. The ABTs got smoked on the Traeger and the belly, ribs and burnt ends went on the KBQ. All of it was really good but those Burnt Ends were REALLY good! We are in a meat coma, too full of Fine Swine to move, we literally pigged out. Then there are those dang cinnamon rolls in the kitchen begging for my attention. I think I need to go for a ride on the scooter to get away, lol!
