Had an idea for a maple/bourbon sauce and wanted a meat to try it on so I thought why not a Chuckie!
I used Big Dick's Steak It and hickory pellets, slow smoked it in the Rec Tec for 5 hrs. Was a tad dry (my fault) but really good and the sauce worked well but I do have to make it a few more times to dial it in better. I think I used just a little to much Stevia and it has a slight bitter taste to it but it is good.
Chuckie was taken to 205 before resting and slicing. When I went to slice it some parts just fell apart! Yummy! ;)
I did foil, which I normally dont do, but we had some issues with Kimmie's dad that had to be taken care of so it stayed on longer than I wanted it to
