I ordered one of these and it's supposed to arrive today.  I'm looking forward to giving it a try.

 Yes, interesting device.  If it works well it should pay for itself in the saved cost of aged beef. Or at least you would be getting better beef than you normally have the option of.

We buy a 5 pack of choice rib eye at a time from Sams Club, Vac Seal and in the freezer.
We could do the same in our outside fridge.

PS:  How is the San Fernando Valley doing these days??

They had a coupon code for $50 off around Halloween.  That's when I pulled the trigger.  All the videos I've watched seem to think it works well so I'm hoping it will be worth the money.

The Valley is good.  Still nice and hot.

My understanding is that it works better with a roast than with individual steaks because of the hard outter skin that dry aging creates.  You dry age the roast, trim the outer skin, and then cut it up into steaks.

My understanding is that it works better with a roast than with individual steaks because of the hard outter skin that dry aging creates.  You dry age the roast, trim the outer skin, and then cut it up into steaks.

Well if that is the case we could revert back to the old day when we purchase a whole and cut into steaks.
In this case we could cut as needed.  That is if it holds a complete roast.

Good questions.  Now I know you asked Bill but I thought I would interject my thoughts if that is OK.

For me the wire would not be a problem through the gasket of our outside fridge becasue I already run a wire though when binning.

As far as the moist air well in my opinion and without seeing the Steakager I think the amount of moist air would be almost negotiable.
Now I hope I am right about that because if not that could be problem.

Good questions.  Now I know you asked Bill but I thought I would interject my thoughts if that is OK.

Art I guess as the saying goes time will tell ;D ;D  I think this is something that you would need an outside fridge as this would take up too much room inside. I will also guess the wire will be ok as it does not seem to be thick & hopefully people would not trip on it or snag it.

It would be fun to have but for me the price will keep me away for now.

What happen to entering the market at a low price to entice buyers and raise the price later.

Ok I really like it. I would love to get a small fridge and one of these.

I have made my own dry-aged steaks before using the dry age bags and loved the results.

I do have room in (Miser's Fridge") as Sweetie calls it but I think, as Tailgating does, the price is on the high end.

The wire goes out the hinge side of the door.  Apparently, the gasket form fits around it and there is no leak.  As for the moist air, I believe that leaving the unit dissipates when the refrigerator door is opened.  Also, there's a salt sack that is supposed to wick some of the moisture.

from what I understand they entered the market with a price of $150 (via kickstarter).  After they sold the first batch they made some improvements (bluetooth/wifi and stainless steel) at that point, the price went up to $250.  However, they had a coupon code for $50 off for Halloween. I suspect they'll do the same around Thanksgiving and almost definitely for Christmas.  I balked at $250 and wasn't going to get it, then I saw the cheaper price and decided to give it a try.

RAD it would except I believe the fridges use a smaller based bulb and the light shuts off when the fridge door closes so unless you modify the switch....

You don't need to add internal power.  The power cord slips through the door's gasket.  It seems like a well designed piece of equipment.

I thought you guys might like an update.  Here's my first attempt at dry aging beef with The SteakAger. Certified Angus Beef rib roast after almost 27 days. I'm planning to go to 35.

How much did the meat weigh going in?

I don't know.  The cut of meat that I got was too big to fit so I had to cut it down.  I thought it would be disgusting to weigh it on the bathroom scale so I just put it in without weighing it.

Well, here's the finished product.

Coated in Char-Crust and then smoked with oak on a Weber kettle and reverse seared.  Perfect medium rare.  The family really enjoyed the taste and texture of the dry aged beef.  I'm ready to start my second round of aging.
