Decided to make Cornish Hens.
Made up a marinade and let the marinade overnight.
Put them in the SRG with some hickory pellets.

On high with the lid closed. Not sure on the exact time, I think it was around 40 min but I was paying more attention to temp rather than time.

Tell us about the marinade Gus...Was it something like Cornell Chicken?

Tell us about the marinade Gus...Was it something like Cornell Chicken?
The marinade:
3.0 Cups Olive oil
0.5 cups Garlic-minced
3 each Orange
3 each Lemons
3 each lime
0.3 cups chopped Rosemary
0.3 Kosher salt
0.3 cups black pepper
Pour the olive oil into a medium sized mixing bowl. Zest the oranges, lemons and limes to get about 1/3 cup of each. Then squeeze the oranges, lemons and limes to get about a cup of juice. Add the citrus zest, all of the juice, the chopped rosemary leaves, the salt and pepper and the minced garlic into the bowl of olive oil and mix well. Spatchcock the hens and place the chicken halves into a large lidded bowl. Pour the marinade over the chicken stirring while pouring. Put the lid on the container and place the chicken into the fridge for 12-14 hours.
