Had a package of smaller pieces from the end of a belly I did a couple months ago so I thought....

MMmmm HHmmm, That's some good stuff. My beef jerky with superpig is even better today.

 Just a tip about jerky making with Super Pig.....Make a marinade with it by adding SP to water, and dissolve.  Overnite is a good start for amount of time. Thicker jerky may benefit with a 24 hour soak.

Thanks Tim, I will try that next time. It is really good and added some heat as well which I did not notice last night as it was warm and right out of the smoker.

The only way you can improve pig candy is a trick I learned from Art (ACW3) -- dip it in chocolate  ;D

Then roll it is crushed pecans dusted with a bit of jalapeno dust..... ;D
