That's interesting how the turkey is hung horizontally like that! Staying tuned to see how this one turns out! :)

I forgot to mention I tossed in a couple of small hunks of peach for smoke.....here is the turkey 4.5 hours later cooked to perfection!!
I had a easy time removing the turkey...I undid on of the hooks and slid out one of the rebar then grabbed the turkey and lifted it right out into a pan!!
Is this a pretty looking turkey or what?? ;)

Insanely moist. White and dark meat were perfect. The strange thing about this cooker is that you would think that after 4.5 hours cooking directly over charcoal the meat would be dark and smokey but it isn't. It has that "Grease Fog" flavor that you just have to taste, I just can't describe it!!  Brisket and Butts up next.........

In fact, my Dad said it doesn't taste smokey, but it is the best turkey he has had in a long time!!

I've been following your experience with this cooker since you started posting it. This turkey may be the final one that gets me going! Just have to figure out how to get it onto the deck "safely" (SWMBO has motion detectors, cameras, and other devices set up to catch me adding a new cooker to the collection.  ???

When I do order one, I'll be sure to let them know who sent me!

Cheers,

David
