Made some Kielbasa yesterday. Let it rest in the fridge over night as I did not have the time to smoke it last night.
Going with a hickory and Jack Daniels blend on the pellets.
I have the  A-MAZE-N-PELLET-SMOKER going with the smoke daddy, letting everyone play today   ;D


Deer meets pork  6lbs of each. Getting mixed with all the fine spices.


All done putting them into coil's


Just gone in for some smoke



Here is an update on the Kielbasa. It has a ways to go before it reaches 152°F.



Time to turn the lights on.........man it gets dark fast now.  8)

OK all done and blooming. Man it got cold out.


Ok here they are, wish you guys could scratch and sniff. These are so good to smell and will be better to eat. :drooling:

Man, do  I like the way that looks!

I'll have to try using venison in kielbasa sometime soon.

OK nothing special about the smokers. Started out with the digital bradley four rack. Made a few mods to it like adding an extra element and PID controller. Build a cold smoke attachment out of an old microwave.


All work very well but I needed more toys so I found a old lab oven at work. Kinda talked the boss out of it. Its a Precision economy oven 45EG.

15.5 x 18.5 x 27 in.
4.5 cu. ft.
65° to 210°C
Stainless-steel interior and rugged steel cabinet offer easy cleaning and durability; resist corrosion
Insulation (2 in. thick [5.1cm]) provides efficient heat retention and precise temperature uniformities

So now I needed a house to keep them in. Living here in Northern Ontario smoking during the winter months is hard but can be done. So I bought one of those plastic sheds you can get at most hardware stores. Mine is 3x 7 I think. Works good so far.



Added a vent pipe to it and we are smoken
