Hanging a Pork Butt...in the Pit Barrel Cooker
« Reply #-1 on: November 11, 2012, 11:20:55 AM »
Seasoned a Butt with Tee's Fine Swine & Bovine. Shot er up with the marinade on the FS&B label.
Fired up the Pit Barrel Cooker. Didn't have to but I tossed in a couple mini splits of Apple wood. The Pit Barrel Cooker gives a great flavor with just regular Kingsford!!
Will catch you all back here a little later.......

Nice!  I actually watched the video yesterday off their website. Think he did a 10 lbr in @ 6 hrs. Took it to around 160F hanging and @ 195F foiled.  I'm sure you already know :). Looking forward to the rest of your cook.

Gonna follow the video as well. Should be around a 6 hour cook. Gonna use original Colorado Kool-Aid for the foil.......

I think it is good to have a charcoal cooker and another type of grill that you can fire up and get cooking when you are pressed for time.......

Don't fret D-Holly...the Pit Barrel Cooker requires no seasoning or breaking in......so you got time to get your Kingsford and some lighter fluid...which I might add...adds no foul odors at all to the meat OR the barrel!!!!  Just wait exactly 20 minutes to hang your meat and you are downtown!! :)

3.5 hours in and the butt is at 150 internal and looks purdy

Into foil with a little bit of Colorado Kool-Aid and onto the charcoal grate...remember D-Holly...when using the charcoal grate you still want to put the re-bar back in place because that is how the barrel was dialed in for.......

Should be good Smoke!

I thought you were gonna leave it unfoiled? Losing precious bark that way IMHO.

Allrighty.....all done!! Total cook time  5.5 hours for a 11 lb butt and fall apart tender after a 2 hour rest in foil...outrageous!!

Gonna give Noah a call next week and get some guidance on a brisket...will do it over the Thanksgiving Holiday.........
