Glad to see you posting Thom. Hanging the meat sure creates a bunch of space for meat capacity. Letting the meat hang and drip over the coals allows for the grease fog which cant be duplicated in other types of smokers.

The briskies come out real good. There is a different technique in the hanging of it though. Noah has a brisket video on his site that shows how.
