Pescado zarandeado (zarandeado fish) is a common dish served in the pacific northwest of Mexico, specifically in Nayarit and Sinaloa states. It's grilled fish marinated with a special dressing ( mayo, mustard, garlic, worcestershire, hot sauce, salt and pepper) and finished on top with some caramelized onions with lots of butter.
