So, the wings I put in the fridge to defrost are still a giant chunk of frozen fowl. Since I'm feeling a bit under the weather and wasn't in the mood to spend any more time on my feet than I had to, I went with a riff on comfort food from my childhood.
My mom busted her butt when I was a kid by working a full time job and still coming home to keep the house running. Some nights she'd be tired and she'd make either Chipped Beef on Toast or bacon and pork & beans. No muss, no fuss and still pleasant memories even though they were simple food.
I stumbled across Smithfield Pork Jowl Bacon at Wally World. It's definitely not guanciale, but it it's tasty in a pinch.
I skillet fried the face bacon and made some pinto beans (seasoned with my homemade rib rub and some cooked chunks of the bacon) and a can of corn.
20 minutes later, a grown-up taste of childhood.
I know this isn't even remotely related to BBQ ... but if you see the pork jowl bacon it's worth picking up. Great for seasoning beans and is tasty on it's own. Hope everyone has a great weekend!
