Anybody else like pulled pork burritos?

When my wife and I do a pork butt, we have so much left over that after two days you are looking for a change. Of, course, we freeze it in dinner size packages that are vacuum sealed and when we are looking for something to have for dinner, we pull out one of these packages and steam them in the microwave. So what to do with them?

We have been making burritos. Very simple burritos. You know, lettuce, tomato, onion, maybe some avocado, mozzarella cheese, or anything that tastes good. Maybe even Slawsa?

I usually warm up the tortilla for 20 seconds in the microwave and then fill it, put in some home made salsa with lots of cilantro, roll it, and eat. It's kind of like an all in one meal. And, this is a three napkin meal as all the juice drips out of it. Sometimes, I either fry or scramble some eggs and put them in there as well. The possibilities are pretty much endless.

What do you do for pulled pork burritos? Or, if you have not tried this, you should maybe give a go. Instead of salsa, I have also used plain BBQ sauce and it is just as good.

It seems like pulled pork is more versatile than originally anticipated. Any creative ideas for pulled pork burritos or even enchiladas?

The burritos sound great Ed!

I like to use pulled pork in a hearty stew. All the veggies you like, then add a mix of beef and veg. broth - heat in a crockpot until the vegetables are done. Some times I grill the veggies first - then put them int he stew.
BBQ is neither verb or noun. It is an experience.

Ed, I have not done burritos but we do frajitas a lot and I think it will be great in them.  Like you we used to have more meat from a butt than we could eat.  Now, I cut the butt in half and smoke only one half at a time and free the other.  When cooked this is just the right amount for my wife, daughter, and myself with just enough left over for one sandwich.  Dee

That's the beauty of pulled pork leftovers.  It works in so many ways.  I have done tacos, burritos, nachos, stuffed puff pastry, etc.
