PBC Chicken Salad

I cooked a chicken on the PBC last night. As always, it was great! It was just Rocky and me for dinner, so we didn't finish the chicken. My wife came home late and grabbed a piece - said it was good. Emma was at a friend's house. Ok, all that was to explain that I had a fair number of chunks left today. So, I made some chicken salad. I didn't have time to run to the store, so this was a - what I have on hand salad.

I found a tomato and onion from the garden, some celery, and some grapes. Chopped it all up with the left over chicken. Then I made a dressing from some Hellman's Mayo (my favorite), sour cream, dill, sugar, salt, lemon juice, and pepper. I just kept mixing and adding the ingredients to taste. I like my dressing to be a bit sweet / tart - hard to explain, but the best way is to add ingredients little by little to get the taste you like.

Mixed them together and stashed in the fridge for later - give everything a chance to get "happy." I did taste it first - mmmm.... good. Could have eaten it right then, but I know it will be better later.

I went upstairs for a "sneak peak" of the chicken salad... found Rocky making a sandwich!  ??? ??? No picture - didn't expect to find her. It is getting good - a bit sweet right now, but that will change in a couple more hours... assuming I can keep Rocky away...  ::) ::) ;D

David, that looks delicious. Love chicken salad with green grapes. It gives it that extra punch that makes it special. Good job.

Deb makes a GREAT chicken salad using what you use  - but without the grapes.  Oh, she adds a little dill and chives.
She only wants the chicken smoked on the CI drum smoker for her salad.  It makes it easy for me.

B T W, lotsa folks, here in the South, will slice red seedless grapes instead of the white grapes.  (Deb won't use grapes.)

Looks delicious, David.  Although I'm typically not fond of sweet in my savory foods, I do like the snappy juiciness provided by fresh grapes that contrasts with the mustard and pickle juice I favor in salads like this  :)

pz - I get it. That's why I like the grapes here. The rest is very savory - but the grapes add a "snap" as you say. I do add just a taste of sugar in the dressing for the same reason. The "unexpected" snap from the grapes makes an excellent sandwich. They have a sweetness, but still are tart... I like that.

I've had apple in my chicken salad but I don't think I have had grapes before. Sounds good.
